Ingredients for 4 persons:
- 300 g extra virgin olive oil
- 150 g salted herrings
- 50 g butter
- Cloves of garlic6 or 7 different types of raw mixed vegetables: cardoons, peppers, cabbage, turnips, boiled potatoes, carrots, celery, etc. as needed.
Preparation
Clean the herrings and remove their fishbone. Cut the cloves of garlic thin (alternatively you may chop them up into small pieces). Put the butter in a terracotta container and melt it at very low heat, add the garlic and simmer it until it is glazed but not browned. Then add the oil and the herrings; cook all the ingredients for about10 minutes, still at low heat. The end result is a dipping sauce for the vegetables, that is ready to be brought onto the table.
